Potato Salad

Ingredients:

1 Pound of Potatoes
9 Eggs
¼ of an Onion, chopped (may use less, it is up to you)
Mayonnaise
Mustard
Salt/pepper to taste

Step 1:
Boil potatoes until when poked with a fork, it slides off
Step 2:
Boil eggs: start by putting eggs in a pot with cold/room temperature water no lid, turn heat on. When water comes to a boil, turn off heat place top on and set timer for 12 minutes.After timer goes off, strain eggs and place in an ice bath.When cool enough, peel eggs
Step 3:
Start with about 1 cup of mayo and 2 Tablespoons of mustard
Step 4:
Mix potatoes, onions, and chopped eggs until desired consistency adding more mayo and mustard if needed
Step 5:
Set aside for ½ hour to 1 hour covered in a warm place until doubled in size

Don't forget to season with salt and pepper
Notes: may not need all the eggs,,,,make it your own
